Instead, I’d rather be on the porch enjoying a glass of cold white wine while my kids play and thanking my lucky stars that winter is FINALLY over. So I have created the easiest and yummiest Spring salad so you can spend more time kicking the soccer ball around in the backyard and less time worrying about what’s for dinner. And the best part? This Ultimate Spring Salad is so versatile that you can alter it to fit anyone’s tastes or food sensitivities and it pairs perfectly with Herbed Monkey Bread.
ULTIMATE SPRING SALAD
*Mixed greens
*Dried cranberries or cherries
*Diced green apple
*Frozen edamame (thawed) or green sweet peas
*Sunflower seeds or sliced almonds/pecans
*Crumbled goat cheese
You can also add chopped cucumbers, radishes or asparagus if you are looking for more seasonal veggies to add to your salad. If your family is a fan of dairy, you can also add a diced hard boiled egg. You want to make sure that you don’t muddle the flavors too much, however, and try to maintain a sweet (from the fruit) and tart (from the goat cheese) combo.
After you have constructed your salad with whatever ingredients you have on hand that your family prefers, it is time to work on the salad dressing. While your family may love creamy dressings or simple Italian, the Ultimate Spring Salad tastes the best when tossed with a simple balsamic dressing. It is so easy you don’t even need a measuring cup. All you have to do is remember this ratio:
BALSAMIC DRESSING
1 part Dijon mustard
2 parts balsamic vinegar
4 parts olive oil
Dash of sugar, salt, and pepper
And that’s it. So simple yet so delicious. Just make sure that you don’t put this dressing in the fridge. Because of the addition of olive oil, it should stay in the counter and away from cold temperatures.
