So I like to pride myself on being a pretty cook (my stuffed mushrooms are so amazing I expect for the Food Network to come knocking on my door any second), but here’s the thing: I really like to take shortcuts.Not shortcuts that will ruin a meal or make it unhealthy for my family, but short cuts that ease my prep work so I can spend less time in the kitchen and more time playing with my boys. And the biggest and best short cut ever created: Store bought rotisserie chicken.
Here are my family’s 10 favorite rotisserie chicken recipes that are simply delicious and perfect for busy families on the go like mine.
CHICKEN NOODLE SOUP
-Saute one onion, three large carrots, and three celery stalks in olive oil.
-Cook 1 cup of small pasta in a separate pot to al dente texture.
-Add 25 ounces of chicken broth to the vegetables and bring to a boil.
-Once the soup is simmering, add the cooked pasta and ¾ cup cubed chicken.
-And don’t forget to season with salt and pepper throughout!
-Chop one head of iceberg lettuce, 1 large tomato, 1 large avocado, ½ cucumber, 1 cup cooked corn, and 2 stalks of green onion.
-Add 1 cup of cubed chicken to the salad mixture.
-Top with a favorite vinaigrette dressing.
BBQ CHICKEN PIZZA
There is a debate in our house about how to make a barbecue pizza…mainly about the sauce. So you can either take my side and go barbecue all the way, or be like my husband and simply top a traditional pizza with barbecue sauce laden chicken.
-Combine 1 cup cooked rice, a can of whatever beans preferred, ½ cup salsa, ¼ cup cheese, and ½ cup cubed chicken. Season to taste and heat through.
-Spread mixture evenly in a large soft tortilla and wrap as cleanly as you can.
-Sautee 1 red onion and 2 peppers (any color, but we love red and yellow the most) in a small amount of garlic and olive oil.
-Add 2 cups shredded chicken to the vegetable mixture.
-Use whatever kind of tortillas you prefer, with a splash of lime juice for finishing.
-Don’t forget to season with salt and pepper throughout.
CHICKEN FRIED RICE
-Cook rice (1 part rice to 2 parts water) per package instructions.
-Scramble two eggs into 3 tablespoons vegetable oil. Add cooked rice to the scrambled eggs.
-Toss 1 cup frozen peas, 1 cup cubed chicken and 3 tablespoons soy sauce.
-Top with sliced scallions.
-Heat everything through and enjoy!
CHICKEN AND PASTA BAKE
-Cook 2 cups pasta to al dente per packaging instructions.
-Saute 2 cloves garlic, one small onion, 1 carrot, and 1 rib of celery in olive oil (with seasoning to taste).
-Add 1 small can tomato sauce and 1 small can tomato paste to the vegetable mixture.
-Bring sauce to a simmer.
-Combine 2 cups cubed chicken, the cooked pasta, and sauce in a casserole dish. Top with your choice of cheese.
-Pop the casserole dish under the broiler until the cheese browns and bubbles.
CHICKEN POT PIE
I’m not going to lie….I can’t make a pot pie using my typical laid back cooking style (a little of this, a splash of that, etc.) so I rely on this delicious recipe from my favorite little dough boy.
-Combine 2 cups chopped chicken, 1 cup diced celery, 1/2 cup halved grapes, 2 tablespoons of mayonnaise and seasoning to taste.
-Fantastic on sandwiches or simply by itself!
BBQ PULLED CHICKEN
-Shred an entire rotisserie chicken, mixing it with ¾ cup BBQ sauce.
-Make a sandwich using a great crunchy roll. Top with fried onion strings or sliced pickles…or nothing at all.
